Apple and Blueberry Shortcrust Pie
A cosy British fruit pie with tart Bramley apples, juicy blueberries and a crisp shortcrust pastry lid.
Heat the oven to 200°C/180°C fan/gas mark 6 and lightly grease a 12-hole muffin tin.
Put the diced apples in a saucepan with the mixed spice and 1 tablespoon of water. Cook over a medium heat for 5–7 minutes until just softened, then stir in the raisins and walnuts and leave to cool slightly.
Brush one filo sheet with melted butter, lay another sheet on top and brush again. Add a third sheet, then cut the stack into four squares. Repeat with the remaining filo to make 12 pastry stacks.
Press one pastry stack into each muffin-tin hole, allowing the corners to stand up. Divide the apple filling between the cases.
Brush the remaining filo sheets with butter, fold each into a loose square and place one on top of each filling. Sprinkle with the demerara sugar.
Bake for 15–18 minutes until the pastry is deeply golden and crisp. Cool in the tin for 10 minutes, then serve warm with custard or ice cream.
