Almond Macaroons and Jam Thumbprint Cookies
Chewy almond macaroons and bright jam thumbprint cookies from one simple almond mixture, baked until lightly golden and finished with lemon zest and icing sugar.
This apple, cinnamon and cream cheese dessert toastie turns simple bread into a quick pudding with a crisp buttery outside and a warm, cheesecake-style centre.
Cook it gently in a frying pan or toastie maker so the bread browns before the filling overheats, then let it stand for a minute before slicing.
Beat the cream cheese with the icing sugar and vanilla until smooth and spreadable.
Toss the sliced apple with the cinnamon, then spread the cream cheese mixture over two slices of bread and arrange the apple on top.
Sandwich with the remaining bread, butter the outsides, and sprinkle with a little demerara sugar if using.
Cook in a toastie maker or in a frying pan over a medium-low heat for 3–4 minutes on each side, pressing gently, until crisp, golden and warmed through.
Rest for 1 minute before slicing so the filling settles, then serve warm.
