Ingredients

  • 1 Red Onion thinly sliced
  • 3ml Salt
  • 350g Plain Flour
  • 15ml Olive Oil extra for base
  • 1 clove Garlic minced
  • 45ml Olive Oil

  1. Combine flour, yeast, sugar, salt, olive oil, and warm water to form a dough. Knead until smooth. Let rise for 1 hour.
  2. Cook garlic in olive oil, then add tomato salsa, cumin, and smoked paprika. Simmer for 5 minutes.
  3. Brown chorizo in a pan. Drain excess fat.
  4. Preheat oven to 230°C. Stretch dough into a 30cm circle. Transfer to a baking sheet.
  5. Spread salsa mixture over dough. Top with chorizo, red onion, avocado, and queso fresco.
  6. Bake for 12-15 minutes until golden. Garnish with cilantro. Serve with lime wedges.

Notes

For a quicker prep, use shop-bought pizza dough. Adjust the salsa's spice level to taste.

Add jalapenos or pickled red onions for extra kick. Lime juice enhances freshness.

Pair with Mexican lager or a margarita.
