These cheesy potato rounds cook gently in the slow cooker until tender, then go briefly under the grill for the crisp, golden edges that make them special.

They are a useful side for barbecues, burgers and roast chicken, and travel well for a relaxed potluck-style meal.

  1. Toss the potato rounds with the olive oil, salt and pepper until evenly coated.

  2. Arrange the potatoes in overlapping layers in the slow cooker, scattering Cheddar between the layers and finishing with cheese on top.

  3. Cover and cook on Low for 4–5 hours or High for 2–3 hours, until the potatoes are tender when pierced with a knife.

  4. For crisp edges, transfer the cooked rounds to a foil-lined baking tray, keeping them in a single layer.

  5. Place under a hot grill for 2–4 minutes, watching closely, until the cheese is golden and bubbling.

  6. Serve warm as a side dish.
