Rustic Ninja Foodi Vegetable Stew

This rustic Ninja Foodi vegetable stew is comforting, wholesome, and packed with flavour. A medley of vegetables simmers in a rich tomato-herb base until tender and satisfying.

It is perfect for easy weeknight dinners, batch cooking, and meat-free meals that still feel hearty and full-bodied.

Ingredients

  • Black Pepper, to taste
  • 1 Courgette diced
  • 2 stalks Celery sliced
  • 400 g Mixed Beans drained and rinsed
  • 1 tsp Thyme dried
  • 1 tbsp Tomato purée
  • Salt, to taste
  • 1 Bay Leaf
  • 1 Red Bell Pepper diced
  • 1 large Onion chopped
  • 400 g Potatoes peeled and cubed
  • 400 g Chopped tomatoes canned
  • 750 ml Vegetable Stock hot
  • 3 cloves Garlic minced
  • 2 Carrot peeled and diced
  • 2 tbsp Parsley chopped, to finish
  • 1 tbsp Olive Oil

Method

  1. Set Ninja Foodi to Sear/Sauté and heat olive oil.
  2. Cook onion, carrot, and celery for 4–5 minutes until softened.
  3. Add garlic and cook for 30 seconds.
  4. Stir in potatoes, courgette, pepper, chopped tomatoes, tomato purée, thyme, and bay leaf.
  5. Pour in vegetable stock and mix well.
  6. Pressure cook on High for 8 minutes, then quick-release pressure.
  7. Stir in mixed beans and simmer on Sauté mode for 5 minutes.
  8. Season with salt and pepper, finish with parsley, and serve hot.

Notes

Cut root vegetables evenly for consistent cooking.

Add delicate greens near the end so they stay vibrant.

Stew thickens as it rests, so loosen with a splash of stock if needed.
