One-Pot Ninja Foodi Chicken Thighs with Roasted Vegetables

This one-pot Ninja Foodi recipe combines tender chicken thighs with caramelised vegetables in a simple, no-fuss format.

It is ideal for busy evenings when you want a balanced dinner with minimal prep and cleanup.

  1. Season the chicken thighs with salt, pepper, and your choice of herbs.
  2. Set the Ninja Foodi to 'Sauté' and heat some oil. Brown the chicken thighs on both sides, then remove and set aside.
  3. In the same pot, add chopped potatoes, carrots, and bell peppers. Season with salt, pepper, and additional herbs.
  4. Place the chicken thighs on top of the vegetables.
  5. Close the Ninja Foodi lid, set to 'Air Crisp' at 190°C for about 25 minutes or until the chicken is thoroughly cooked and the vegetables are tender.
  6. Allow the dish to rest for a few minutes before serving to let the flavours meld together.

  • 2 tbsp Extra virgin olive oil
  • Black Pepper, to taste
  • 500 g Baby Potatoes cubed
  • 3 Carrots chopped
  • 1 Spring onions cut into wedges
  • 300 ml Hot Chicken Stock
  • celery salt, to taste
  • 3 cloves Garlic Cloves minced
  • 6 Chicken Thighs bone-in or boneless

Notes

Adjust seasoning to taste before serving for the best finish.
