Luxury Chocolate Cookies

  1. Mix butter egg yolk soft brown sugar honey and salt in a bowl until smooth.
  2. Gradually fold in sifted flour cocoa powder and baking powder without overworking the dough.
  3. Quickly fold in the white chocolate pieces.
  4. Roll the dough into logs about 3cm thick and chill until firm.
  5. Heat the oven to 180°C and line a tray with baking paper.
  6. Slice the chilled dough into 5mm rounds and place on the tray with spacing.
  7. Bake for 15 minutes then cool fully before serving.

Ingredients

  • 1 Egg yolk
  • 60g Soft brown sugar
  • 130g Plain Flour sifted
  • 1 pinch Baking powder
  • 100g White chocolate cut into chips
  • 1 pinch Salt
  • 15ml Honey
  • 45ml Cocoa powder pure sifted
  • 125g Butter room temperature

Notes

Chilling the dough log makes slicing cleaner and helps the cookies keep their shape.

Do not overmix once flour is added or the cookies can turn dense.

Let cookies cool fully on a rack so the centres set properly.
