Joseph's Pizzaritos

Joseph's Pizzaritos are a fun mash-up of pizza and burritos. Soft wraps are filled with rich tomato sauce mozzarella and pizza toppings then folded and baked until golden and crisp.

They are easy to prep with children and perfect for weeknight dinners party platters or weekend cooking projects. Serve with a simple salad and extra warm tomato dip.

  1. Preheat the oven to 200°C fan and line a tray with baking paper.
  2. Mix passata garlic oregano and black pepper in a bowl to make a quick pizza sauce.
  3. Lay out each tortilla and spread a thin layer of sauce across the centre.
  4. Add mozzarella pepperoni sweetcorn and red pepper in a neat strip leaving space at the edges.
  5. Fold in the sides then roll tightly into burrito shapes.
  6. Place seam side down on the tray and brush with beaten egg.
  7. Sprinkle parmesan over each pizzarito for extra crunch.
  8. Bake for 16 to 18 minutes until golden crisp and heated through.
  9. Cool for 2 minutes then slice and serve with extra warm tomato dip.

Ingredients

  • 300g Mozzarella grated
  • Black Pepper, to taste
  • 120g Pepperoni chopped
  • 8 Flour tortillas medium
  • 2 Garlic cloves crushed
  • 250ml Passata
  • 100g Sweetcorn drained
  • 1 Eggs beaten
  • 15ml Olive Oil
  • 120g Red Pepper finely diced
  • 40g Parmesan finely grated
  • 5ml Dried oregano

Notes

Seal the edges well so the cheese stays inside while baking.

Great for lunchboxes once cooled and wrapped.
