Homestyle One-Pot Chicken Casserole

This homestyle one-pot chicken casserole is proper weeknight comfort: golden chicken, tender potatoes, and sweet vegetables simmered in a rich herby gravy.

Everything cooks in a single pot, so it is easy to prep, easy to clean up, and perfect for feeding the family on busy evenings.

Ingredients

  • Salt, to taste
  • 1 tbsp Plain Flour optional, for thickening
  • 1 large Onion chopped
  • Black Pepper, to taste
  • 800 g Chicken Thighs boneless skinless, bite-size pieces
  • 1 tbsp Oil
  • 2 Carrots sliced
  • 2 stalks Celery sliced
  • 120 g Peas frozen
  • 1 Bay Leaf
  • 800 ml Chicken Stock hot
  • 1 tbsp Parsley chopped, to garnish
  • 1 tsp Thyme dried
  • 500 g Potatoes peeled and chunked

Method

  1. Heat oil in a large heavy pot over medium-high heat.
  2. Season chicken with salt and pepper, then brown in batches until lightly golden. Set aside.
  3. In the same pot, cook onion, carrots, and celery for 5 minutes until softened.
  4. Add potatoes, thyme, and bay leaf, then return the chicken to the pot.
  5. Pour in hot chicken stock and bring to a gentle boil.
  6. Reduce heat, cover, and simmer for 30–35 minutes until chicken is tender and potatoes are cooked.
  7. Stir in peas and cook for another 5 minutes.
  8. Optional: mix flour with a little cold water and stir in to thicken; simmer 3–5 minutes more.
  9. Adjust seasoning and finish with chopped parsley before serving.

Notes

Brown the chicken well at the start to build deeper flavour in the casserole.

If you like a thicker gravy, stir in a small flour slurry in the final 10 minutes.
