Bacon, Onion & Red Pepper Tomato Rice with Broccoli

This one-pot tomato rice brings together smoky bacon, sweet red pepper and plenty of garlic, with broccoli stirred through at the end for freshness and bite.

The rice cooks in the tomato and stock base, absorbing the savoury flavour while keeping the washing-up to a minimum.

  1. Heat the oil in a wide lidded frying pan over a medium heat. Fry the diced bacon for 4–5 minutes until lightly browned, then add the onion and red pepper and cook for 5 minutes until softened.

  2. Stir in the garlic and smoked paprika for 30 seconds. Add the rice and tomato purée, stirring for 1 minute so every grain is coated.

  3. Pour in the chopped tomatoes and hot vegetable stock, season with black pepper and a little salt, then bring to a gentle simmer.

  4. Cover and cook for 18–20 minutes, stirring once halfway through, until the rice is tender and the liquid has been absorbed. Add a splash of water if the pan becomes dry before the rice is cooked.

  5. Meanwhile, steam or simmer the broccoli for 4–5 minutes until just tender. Fold it through the rice with the chopped parsley, then leave the pan covered for 2 minutes before serving.
