  1. Toast the slices of sourdough bread until golden brown and crisp. You can do this in a toaster, under the grill, or in a dry pan. Set aside.
  2. Heat the butter and olive oil in a large frying pan over medium-high heat.
  3. Add the sliced mushrooms to the pan and cook for 5-7 minutes, stirring occasionally, until they are browned and have released their moisture.
  4. Reduce the heat to medium, add the minced garlic, and cook for another minute until fragrant, being careful not to burn it.
  5. Pour in the double cream, add the chopped parsley, and season with salt and pepper. Stir everything together.
  6. Let the sauce simmer gently for 2-3 minutes until it has thickened slightly and coats the mushrooms.
  7. To serve, place a slice of toast on each plate and spoon the creamy garlic mushroom mixture generously over the top.
  8. Garnish with a little extra fresh parsley and a crack of black pepper before serving immediately.

  • 2 thick slices Sourdough bread
  • Black Pepper freshly ground, to taste
  • 2 cloves Garlic finely minced
  • 100ml Double cream
  • 2 tbsp Unsalted butter
  • 250g Chestnut Mushrooms cleaned and sliced

Notes

For the best texture, use a sturdy, rustic bread like sourdough or ciabatta that can hold up to the creamy topping without getting soggy.
A splash of white wine added with the garlic can elevate the flavour, just be sure to let it cook off for a minute before adding the cream.
Feel free to add a pinch of red pepper flakes along with the garlic for a gentle kick of heat.
