Creamy Bacon Mushroom Soup

  1. In a large pot, cook the bacon over medium heat until crispy. Remove bacon and set aside, leaving the fat in the pot.
  2. Add onions and garlic to the pot, cooking until onions are translucent.
  3. Increase heat to medium-high and add mushrooms, sautéing until golden.
  4. Return bacon to the pot and add stock. Bring to a simmer and cook for 20 minutes.
  5. Blend the soup until smooth using an immersion blender. Stir in double cream and season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
