Chinese BBQ Spare Ribs

These oven-baked ribs are coated in a savoury-sweet Chinese-style glaze that turns sticky and glossy as it cooks.

Serve them with steamed rice, greens or crisp cucumber for an easy sharing dinner.

  1. Heat the oven to 160C fan. Arrange the pork spare ribs in a snug roasting tin and season lightly with black pepper.

  2. Mix the hoisin sauce, honey, soy sauce, rice vinegar, Chinese five spice, garlic and ginger in a bowl. Brush half over the ribs and cover the tin tightly with foil.

  3. Bake for 1 hour 15 minutes, turning the ribs once and brushing with the remaining glaze. Remove the foil, raise the oven to 200C fan and roast for 15 minutes until sticky and caramelised.

  4. Rest the ribs for 5 minutes, then scatter with the spring onions and toasted sesame seeds before serving.
