Cantonese-Style Fruity Chicken
A quick sweet-and-savoury chicken stir-fry with pineapple, peppers and a glossy soy sauce.
This speedy chicken stir-fry uses a short ingredient list and a hot pan to build plenty of flavour in minutes. Ginger, garlic and soy sauce make a savoury glaze, while spring onion keeps the finish fresh.
Serve with steamed rice or noodles for an easy midweek dinner.
Slice the chicken into thin strips. Peel and finely grate the ginger, crush the garlic, and slice the spring onions, keeping the green tops separate for finishing.
Mix the soy sauce with 1 tablespoon of water. Have the chicken, ginger, garlic and spring onions beside the hob before you start cooking, as the stir-fry comes together quickly.
Heat the oil in a large wok or frying pan over a high heat. Add the chicken in a single layer and stir-fry for 4–5 minutes, until lightly browned and cooked through.
Add the ginger, garlic and the white parts of the spring onions. Stir-fry for 1 minute, then pour in the soy mixture and toss until the chicken is glossy.
Season with black pepper, scatter over the spring onion tops and serve straight away with rice or noodles.
