  1. Cook the sausages according to their packet instructions until fully cooked through. For an air fryer, use 180°C as a guide and allow approximately 12–18 minutes, turning halfway; larger sausages may need longer. Alternatively, pan-fry with the oil if needed. Do not put raw sausages into the assembled bake.

  2. While the sausages cook, heat the oven to 200°C / 180°C fan / gas 6. Set out an ovenproof dish roughly 25 × 20cm. Let the cooked sausages cool just enough to handle, then cut each into two or three chunky pieces.

  3. Stir the baked beans, prepared gravy, black pepper and optional Worcestershire sauce together in the dish. Fold through the sausage pieces and spread the filling into an even layer.

  4. Sprinkle the Cheddar over the filling. Arrange the frozen hash browns on top in one layer, leaving narrow gaps around them. Keep them above the sauce rather than pressing them into it.

  5. Bake uncovered on the middle shelf for 30–40 minutes, until the filling bubbles throughout and the hash browns have crisp, golden edges. Check that the centre is piping hot. If the hash brown packet specifies a longer cooking time, allow that extra time and protect any overly browned edges.

  6. Leave the bake to stand for 5 minutes before serving, so the gravy settles slightly. Spoon out portions with some crisp topping and sausage-and-bean filling in each.

Notes

Gravy consistency: Use thick prepared gravy rather than a thin pouring gravy. Reduce it to 150ml if the baked beans have a particularly loose sauce. Taste before adding any salt: the sausages, cheese and gravy already provide plenty.

A crisp topping: Keep the hash browns in a single, uncovered layer. For extra colour, finish briefly under the grill only if your dish is grill-safe, watching closely.

Make ahead: Prepare the cooked sausage and bean base ahead and refrigerate it covered. Add the cheese and frozen hash browns just before baking. A chilled base may need longer in the oven; it must be piping hot throughout.

Serving: Serve with steamed broccoli, peas or a green salad. For a smoky variation, use smoked Cheddar and stir ½ tsp smoked paprika into the beans.

Check labels: Sausages, gravy and hash browns can contain wheat or other allergens; Cheddar contains milk and Worcestershire sauce may contain fish. A vegetarian version needs suitable sausages, gravy, cheese and sauce.

About this recipe

This sausage and bean bake has a bubbling, savoury filling and a crisp potato topping that makes it especially good for a hungry family. Thick onion gravy enriches the baked beans, while mature Cheddar melts between the filling and the hash browns. Cutting the cooked sausages into chunky pieces makes the dish easy to spoon out and share.

The hash browns go on straight from the freezer in a single layer, with small gaps to help their edges colour. Keep the dish uncovered so the topping crisps rather than steams, and serve with steamed greens or a sharp green salad to balance the rich filling.
