  1. Heat the oven to 200°C (180°C fan). Put the sausages on a tray, drizzle with a little oil and roast for 25–30 minutes, turning once.
  2. Meanwhile, boil the swede and sweet potato in salted water for 18–20 minutes until tender.
  3. In a saucepan, soften the sliced onions in olive oil for 8–10 minutes. Add garlic and cook for 30 seconds.
  4. Stir in mustard, then add hot beef stock and simmer for 5–7 minutes until lightly reduced.
  5. Drain the swede and sweet potato, mash with butter, and season with salt and pepper.
  6. Steam or boil the green beans for 4–5 minutes until just tender.
  7. Serve the sausages with the mash, green beans and onion gravy.

Ingredients

  • 500ml Beef Stock hot
  • 1 tbsp English Mustard
  • 40g Butter
  • 8 Pork Sausages good-quality
  • 1 tbsp Olive Oil
  • 500g Sweet Potato peeled and diced
  • 2 Garlic Cloves minced
  • 2 Onion thinly sliced
  • 400g Swede peeled and diced
  • Black Pepper freshly ground, to taste
  • 200g Green beans trimmed
  • Sea Salt, to taste

Notes

Shake the sausage tray once during roasting so they brown evenly.

Taste and season the mash and gravy separately before serving.
