Cheesy Meatball Potato Bake

Ingredients

  • 200g Cheddar Cheese grated
  • 1 Onion finely chopped
  • 1 Egg large
  • 2 cloves Garlic minced
  • 500g Beef ground
  • 60ml Breadcrumb

Method

  1. Preheat the oven to 180°C.
  2. Mix together ground beef, breadcrumbs, an egg, chopped onions, garlic, salt, and pepper. Form into meatballs.
  3. Slice the potatoes into thin pieces and arrange them in a greased baking dish.
  4. Place the meatballs among the sliced potatoes.
  5. Pour over a mix of crushed tomatoes and your choice of herbs.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil, top with grated cheese, and bake for an additional 20 minutes or until the cheese is golden and bubbly.
  8. Let it rest for 5 minutes before serving.
