Hearty Sausage Meat Pie

Sausage Meat Pie is a classic British bake with a rich, savoury filling wrapped in crisp golden pastry. Seasoned sausage meat is cooked with onion, garlic and herbs to create a hearty centre that is full of comforting flavour.

As it bakes, the pastry turns beautifully flaky while the filling stays juicy and tender, making each slice satisfying and moreish. It is ideal for weekend lunches, cosy family suppers, or serving cold the next day with pickles and a simple green salad.

This pie is straightforward to prepare but delivers the feel of a proper homemade treat. Serve it warm with buttery mash, peas or gravy for a traditional plate, or enjoy it at room temperature as part of a picnic spread.

Ingredients

  • 1 Carrot diced
  • 2 cloves Garlic minced
  • 700 g Pork Sausagemeat
  • 1 Egg beaten
  • 1 tsp Dried Thyme
  • 200 ml Chicken Stock
  • 1 tbsp Plain Flour
  • 320 g Puff Pastry ready-rolled
  • 1 large Onion finely chopped

Method

  1. Brown the sausagemeat in a large pan.
  2. Add onion, garlic and carrot and soften.
  3. Stir in flour and cook for 1 minute.
  4. Gradually add stock to make a thick gravy.
  5. Add thyme, season and simmer briefly.
  6. Transfer filling to a pie dish and cool slightly.
  7. Top with pastry, crimp edges and brush with egg.
  8. Bake at 200°C for 30–35 minutes until deep golden.

Notes

Cool filling before topping with pastry so it stays crisp.

Brush pastry with egg wash for an even golden finish.
