Brown the sausagemeat in a large pan.
Add onion, garlic and carrot and soften.
Stir in flour and cook for 1 minute.
Gradually add stock to make a thick gravy.
Add thyme, season and simmer briefly.
Transfer filling to a pie dish and cool slightly.
Top with pastry, crimp edges and brush with egg.
Bake at 200°C for 30–35 minutes until deep golden.
