Cheat's Quick Samosas

These cheat’s quick samosas use ready-made pastry and a spiced potato-and-pea filling, baked until crisp and golden.

They are ideal as a snack, starter or easy side, especially with tamarind chutney or mango chutney for dipping.

Method

  1. Preheat the oven to 200°C/180°C fan and line a baking tray with baking paper.
  2. Heat the oil in a pan, add the cumin seeds for 30 seconds, then stir in the mashed potatoes, peas, garam masala, chilli powder and salt. Cook for 2–3 minutes, then cool slightly.
  3. Cut the pastry into long strips. Spoon a little filling onto one end of each strip, then fold repeatedly into triangles, sealing the edge with a little melted butter.
  4. Place on the tray, brush with more melted butter and bake for 20–25 minutes until crisp and golden.
  5. Serve hot with tamarind chutney.

Ingredients

  • 500g potatoes boiled and roughly mashed
  • 100g peas cooked
  • 1 tbsp Vegetable Oil
  • 1 tsp cumin seeds
  • 1 tsp Garam Masala
  • 1/2 tsp Chilli Powder
  • salt, to taste
  • 6 sheets ready-made filo pastry or spring roll pastry
  • 30g butter melted, for brushing
  • 4 tbsp tamarind chutney to serve

Notes

For a healthier version, you can bake the samosas instead of frying. You can experiment with different fillings like spiced minced meat or mixed vegetables.
