Baked Chicken with Soy, Honey Butter & Pak Choi

This easy oven-baked chicken brings together salty soy, sweet honey and rich butter in a glossy glaze. Pak choi cooks alongside the chicken at the end, keeping its leaves tender and its stems crisp.

Serve it with rice or noodles to catch the pan juices, plus a squeeze of lime for a fresh finish.

  1. Heat the oven to 200°C fan. Stir the soy sauce, honey, melted butter, garlic and ginger together in a small bowl.

  2. Put the chicken in a roasting tin and toss with two-thirds of the glaze. Roast for 20 minutes, turning once, until browned and cooked through.

  3. Add the pak choi to the tin and spoon over the remaining glaze. Roast for 5 minutes more, until the leaves wilt and the thick stems are just tender.

  4. Scatter over the spring onions and sesame seeds. Rest the chicken for 5 minutes, then serve with lime wedges and rice or noodles.
