Breakfast Sausage Crescent Roll Bake

This breakfast bake combines flaky crescent rolls with seasoned sausage, cream cheese and Cheddar. An egg mixture settles around the rolls as they bake, giving the dish a soft, savoury centre and a golden top.

Prepare it for a weekend brunch or make it ahead for an easy family breakfast. Let it rest briefly before slicing so the filling sets.

  1. Heat the oven to 180°C and lightly grease a large baking dish.

  2. Cook the sausage in a frying pan over a medium heat for 6–8 minutes, breaking it up, until browned and cooked through. Add the onion for the final 2–3 minutes if using, then drain excess fat.

  3. Stir the softened cream cheese into the warm sausage until smooth. Set aside to cool slightly.

  4. Spoon a little sausage mixture onto the wide end of each crescent triangle, add a pinch of Cheddar, then roll towards the point. Arrange the rolls close together in the greased dish.

  5. Whisk the eggs with the milk, garlic powder, salt and pepper. Pour evenly over the rolls, then scatter the remaining Cheddar over the top.

  6. Bake for 25–30 minutes, until the rolls are golden and the egg mixture is set.

  7. Rest for 5 minutes, scatter with parsley if using, and serve warm.
