Black Pepper Sauce

This quick black pepper sauce brings together cracked pepper, soy, stock, garlic and ginger for a glossy finish with plenty of savoury depth.

Serve it with stir-fried beef, chicken, vegetables or noodles, adding the cornflour slurry at the end so the sauce coats everything neatly.

  1. Mix the cornflour with the cold water in a small bowl. Measure the soy sauce, stock, sugar, sesame oil and black pepper so they are ready to add.

  2. Heat the vegetable oil in a saucepan over medium heat. Add the garlic and ginger and cook for 30 seconds, stirring, until fragrant.

  3. Pour in the soy sauce and stock, then add the brown sugar and black pepper. Bring to a gentle simmer and cook for 3 minutes so the flavours come together.

  4. Stir the cornflour slurry again and pour it into the simmering sauce. Cook for 1–2 minutes, stirring, until glossy and thick enough to coat a spoon.

  5. Remove from the heat and stir through the sesame oil. Taste, add more black pepper if needed, and serve straight away.
