A tender pork shoulder is cooked low and slow until it pulls apart easily, then coated in smoky barbecue sauce and piled into soft brioche buns with crisp coleslaw. It is ideal for relaxed weekend lunches and easy crowd cooking.

  1. Rub the pork shoulder all over with the brown sugar, paprika, salt and black pepper.

  2. Heat the olive oil in a large frying pan and brown the pork on all sides, then transfer it to a slow cooker with the sliced onion and chopped garlic.

  3. Cover and cook on low for 8 hours, until the pork is very tender and pulls apart easily with a fork.

  4. Lift out the pork and shred it with two forks. Stir through the BBQ sauce, adding a little of the cooking juice if needed.

  5. Fill the brioche buns with the pulled pork and coleslaw, then serve while warm.
