Spicy Chipotle Bacon Butty with Homemade Bacon Butter and Chipotle Ketchup
A smoky bacon butty with chipotle ketchup, crisp bacon and a quick savoury bacon butter for a punchy weekend breakfast.
Rub the pork shoulder all over with the brown sugar, paprika, salt and black pepper.
Heat the olive oil in a large frying pan and brown the pork on all sides, then transfer it to a slow cooker with the sliced onion and chopped garlic.
Cover and cook on low for 8 hours, until the pork is very tender and pulls apart easily with a fork.
Lift out the pork and shred it with two forks. Stir through the BBQ sauce, adding a little of the cooking juice if needed.
Fill the brioche buns with the pulled pork and coleslaw, then serve while warm.
