This chicken garlic sandwich is a simple, satisfying lunch or brunch idea with shredded cooked chicken, garlic butter and plenty of melted cheese tucked into thick toasted bread.

It works well with leftover roast chicken or rotisserie chicken, and the filling can be mixed ahead so the sandwiches only need a few minutes in a hot pan when you are ready to eat.

  1. Mix the shredded chicken with 1 tbsp of the garlic butter, the chopped parsley, a small pinch of salt and black pepper.

  2. Spread the remaining garlic butter over one side of each slice of bread.

  3. Build two sandwiches with the buttered sides facing out, dividing the chicken mixture and shredded mozzarella between them.

  4. Warm the olive oil in a frying pan over a medium heat, then add the sandwiches and press gently with a spatula.

  5. Cook for 3–4 minutes on each side until the bread is golden and crisp and the cheese has melted. Lower the heat if the bread colours before the cheese melts.

  6. Rest for 1 minute, then slice and garnish with a little extra parsley before serving.
