Lebanese Zaatar Flatbread (Manakish)
A warm Lebanese flatbread topped with fragrant zaatar and olive oil, baked until crisp-edged and golden.
Make soft, chewy naan at home with a simple yeasted dough enriched with yoghurt and butter. Cook the breads in a very hot pan for the characteristic bubbles and toasted patches.
Stir the warm water, yeast and sugar together in a bowl. Leave for 5–10 minutes until the yeast becomes lightly frothy.
Add the flour, salt, baking powder, yoghurt and melted butter. Mix to a shaggy dough, then knead on a lightly floured surface for 6–8 minutes until smooth.
Put the dough in an oiled bowl, cover and leave in a warm place for about 1 hour, or until doubled in size.
Divide the dough into 6 pieces and roll each into a ball. Roll out one ball at a time into a thin oval, dusting lightly with flour.
Heat a heavy frying pan over medium-high heat until very hot. Cook each naan for 1–2 minutes until bubbles form and the underside is browned, then turn and cook the other side.
Brush the cooked naan with melted butter and keep covered while you cook the remaining breads. Serve warm.
