Banana Doughnut Balls
Crisp, light banana doughnut balls with a soft centre, fried until golden and finished with caster sugar.
These golden filo parcels wrap soft banana and dark chocolate in crisp pastry, with a little cinnamon for warmth. They are quick to assemble and lovely served warm as a simple dessert or afternoon treat.
Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking paper.
Mash the bananas, then stir in the chopped dark chocolate, caster sugar and cinnamon.
Lay one filo square on the tray, brush lightly with melted butter, then layer on another square and brush again.
Place a spoonful of the banana and chocolate filling in the centre, fold the pastry into a parcel and seal the edges with butter.
Repeat with the remaining pastry and filling, arranging the parcels with the folded side down.
Bake for 15-18 minutes until crisp and golden, then dust with icing sugar and serve warm.
