Ripe banana keeps these easy cookies soft and chewy, while dark chocolate chips add pockets of richness. Chill the dough before baking for a neater shape and lightly crisp edges.

  1. Beat the softened butter and caster sugar until pale and creamy, then mix in the beaten egg and vanilla extract.

  2. Stir in the mashed banana. Add the plain flour, bicarbonate of soda and salt, mixing just until no dry flour remains.

  3. Fold through the dark chocolate chips, cover the dough and chill for 1 hour.

  4. Heat the oven to 180°C/160°C fan/gas 4. Roll the dough into 24 balls and place them on lined baking trays, leaving room to spread.

  5. Bake for 11–12 minutes until the edges are lightly golden and the centres are still soft. Cool on the trays for 10 minutes, then transfer to a rack.
