Baked Salmon with Cream Cheese & Parmesan Crust
Oven-baked salmon topped with lemony cream cheese, Parmesan and crisp breadcrumbs for an easy, flavourful dinner.
This baked cod is finished with a smoky cowboy-butter mixture and served over creamy butter beans. Lemon and parsley keep the dish bright, while the beans make it substantial enough for a simple dinner.
Everything cooks in one dish, with the cod added near the end so it stays moist and flaky.
Heat the oven to 200C fan/220C conventional. Mix the softened butter with the garlic, smoked paprika, lemon zest, half the lemon juice, parsley and a good pinch of salt and pepper.
Put the drained butter beans in a shallow baking dish and toss with the olive oil, remaining lemon juice and a little seasoning. Bake for 10 minutes so the beans are hot.
Pat the cod dry and spread the cowboy butter over the top of each fillet. Nestle the cod among the beans and bake for 12-15 minutes, until the fish is opaque and flakes easily.
Spoon the buttery beans into bowls, place a cod fillet on top and finish with the pan juices and extra parsley.
