Ingredients
- 200 g Chopped tomatoes
- 3 tbsp Olive Oil
- 2 Garlic Cloves minced
- 1 tsp Sherry Vinegar
- 900 g Potatoes peeled and cubed
- 120 g Mayonnaise for serving
- Sea Salt, to taste
- 1 tsp Smoked Paprika

- Heat the oven to 220°C (200°C fan). Toss potatoes with two tablespoons of olive oil and salt.
- Roast for 35–40 minutes, turning once, until crisp and golden.
- For the bravas sauce, cook garlic in remaining oil for 30 seconds, then add paprika, tomatoes and vinegar.
- Simmer the sauce for 8–10 minutes until thick and season to taste.
- Serve the potatoes with warm bravas sauce and mayonnaise.
