Ingredients

  • 200 g Chopped tomatoes
  • 3 tbsp Olive Oil
  • 2 Garlic Cloves minced
  • 1 tsp Sherry Vinegar
  • 900 g Potatoes peeled and cubed
  • 120 g Mayonnaise for serving
  • Sea Salt, to taste
  • 1 tsp Smoked Paprika

  1. Heat the oven to 220°C (200°C fan). Toss potatoes with two tablespoons of olive oil and salt.
  2. Roast for 35–40 minutes, turning once, until crisp and golden.
  3. For the bravas sauce, cook garlic in remaining oil for 30 seconds, then add paprika, tomatoes and vinegar.
  4. Simmer the sauce for 8–10 minutes until thick and season to taste.
  5. Serve the potatoes with warm bravas sauce and mayonnaise.
