Authentic Bratwurst with Sauerkraut

Browned bratwurst, soft onion and sweet apple make a classic base for sharp sauerkraut in this easy German-style dinner.

A little Dijon mustard and caraway pull everything together. Serve with boiled potatoes, pretzels or crusty bread.

  1. Heat the oil in a large lidded frying pan over a medium-high heat. Add the bratwurst and cook for 6 to 8 minutes, turning, until browned all over, then lift them onto a plate.

  2. Turn the heat down to medium, add the sliced onion and apple to the pan and cook for 5 minutes until softened and lightly coloured.

  3. Stir in the sauerkraut, caraway seeds, Dijon mustard and chicken stock, then season with black pepper and bring everything to a gentle simmer.

  4. Nestle the bratwurst back into the pan, cover and cook for 15 to 20 minutes until the sausages are cooked through and the sauerkraut is tender.

  5. Scatter over the parsley and serve hot with potatoes, pretzels or crusty bread.
