Chicken schnitzel is a simple German-style supper made by coating thin chicken breasts in seasoned flour, egg and breadcrumbs, then shallow-frying until crisp and golden.

Serve straight from the pan with lemon wedges and a fresh salad, or add chips for a more substantial meal.

  1. Place the chicken breasts between sheets of baking paper and gently pound them to an even thickness. Season both sides with the salt and pepper.

  2. Set out the flour, beaten eggs and breadcrumbs in three shallow dishes. Coat each chicken breast in flour, then egg, then breadcrumbs, pressing lightly so the crumb coating sticks.

  3. Heat the oil in a large frying pan over a medium heat. Fry the schnitzels in batches for 3–4 minutes on each side until golden brown and cooked through.

  4. Drain briefly on kitchen paper, then serve with lemon wedges and a crisp salad or chips.
