Made by using lamb fat to fry up crispy bacon and caramelised onions, this gravy is thickened with a roux and smoothly blended with chicken stock for a luscious, velvety finish. It's ideal for drizzling over mashed potatoes, roasted vegetables, or your favourite meats, adding a layer of deep, comforting taste to your dishes.

  1. Heat the lamb fat in a pan over medium heat.
  2. Add the bacon and onion to the pan. Fry until the bacon is crispy and the onions are caramelized.
  3. Sprinkle the flour over the bacon and onions. Stir well to combine and cook for 2 minutes to form a roux.
  4. Gradually add the chicken stock while continuously stirring to ensure the mixture remains smooth.
  5. Bring the gravy to a simmer and cook for an additional 10 minutes, or until it thickens to your desired consistency.
  6. Serve the gravy hot over mashed potatoes, roasted vegetables, or your choice of meats.

  • 30ml Flour
  • Black Pepper
  • 100g Bacon diced
  • 1 Onion finely sliced large
  • Stock Cube
  • Mixed Herbs
  • Salt
  • 500ml Chicken Stock
  • Garlic

Notes

For a richer flavour, you can substitute lamb or beef stock for the chicken stock. Adjust the thickness by varying the amount of flour or stock to suit your preference.
