Pulled Pork with Coleslaw & Roasted Potatoes

  1. Rub the pork shoulder with a mixture of paprika, garlic powder, salt, and black pepper.
  2. Place the pork in a slow cooker and pour a mixture of BBQ sauce and apple cider vinegar over it.
  3. Cook on low for 8 hours until the pork is very tender.
  4. Remove the pork and shred it with forks, then return it to the slow cooker to mix with the juices.
  5. Serve the pulled pork with a side of coleslaw and roasted potatoes.

Ingredients

  • 30ml Paprika
  • 1.5 kg Pork Shoulder
  • 1 Cabbage shredded medium
  • 5ml Garlic minced
  • 15ml Sugar
  • 2 Carrot grated
  • 30ml Olive Oil

Notes

For a more smoky flavour, you can add a bit of liquid smoke to the BBQ sauce. Also, letting the pulled pork rest in its juices after shredding enhances the flavour and tenderness.
