One-Pan Honey Glazed Ham with Roasted Vegetables

This one-pan honey glazed ham is built for an easy Sunday-style dinner without juggling lots of pans. The gammon joint roasts over potatoes, carrots and parsnips so the vegetables catch the savoury juices while the glaze turns glossy.

Give the ham a short rest before slicing, then spoon over the tray juices for a simple, generous meal.

  1. Heat the oven to 190°C/170°C fan and put the potatoes, carrots, parsnips and red onion into a large roasting tin.

  2. Toss the vegetables with olive oil, thyme and black pepper, then sit the gammon joint in the middle of the tin.

  3. Cover loosely with foil and roast for 45 minutes, basting the vegetables once with the tray juices.

  4. Mix the honey, Dijon mustard and apple cider vinegar in a small bowl, then brush half over the ham.

  5. Return the tin to the oven uncovered for 25–30 minutes, brushing with the remaining glaze halfway through, until the ham is glossy and the vegetables are tender.

  6. Rest the ham for 10 minutes before slicing, then serve with the roasted vegetables and spoonfuls of the tray juices.
