- 2 Onions thinly sliced
- 40 g White Breadcrumbs
- 100 g Anchovy Fillets drained
- Black Pepper freshly ground, to taste
- 300 ml Double cream
- 40 g Unsalted butter
- 1 kg Potatoes peeled and cut into matchsticks
- 120 ml Whole Milk

- Heat the oven to 200°C (180°C fan) and butter a medium baking dish.
- Gently soften the onions in half the butter without colouring.
- Layer potatoes, onions and anchovies in the dish, seasoning lightly with pepper between layers.
- Pour over cream and milk, top with breadcrumbs and dot with the remaining butter.
- Bake for 45–55 minutes until tender and golden on top.
Notes
