  1. Heat a large skillet over medium-high heat and add the bacon strips. Cook until crispy, then remove and set aside on paper towels to drain.
  2. In the same skillet with the bacon fat, add the diced potatoes in a single layer. Season with salt and pepper. Cook without stirring for about 5 minutes, then stir and continue cooking until golden brown and crispy, about 10 more minutes.
  3. Add the chopped onions to the skillet with the potatoes, stirring occasionally, until the onions are soft and caramelized, about 10 minutes.
  4. Chop the cooked bacon into pieces and add back to the skillet with the potatoes and onions. Mix well to combine.
  5. Garnish with freshly chopped chives or parsley before serving.

Notes
