  1. Pat the chicken pieces dry and season with salt and black pepper.
  2. Heat 2 tbsp butter in a large frying pan over medium-high heat.
  3. Add the chicken in a single layer and cook for 3-4 minutes without moving to develop colour.
  4. Turn and cook for another 3-4 minutes until cooked through and golden.
  5. Lower the heat to medium, add remaining butter and minced garlic, and stir for 30-60 seconds until fragrant.
  6. Toss the chicken in the garlic butter until evenly coated and glossy.
  7. Check seasoning and adjust with extra salt and pepper if needed.
  8. Finish with chopped parsley and serve immediately with lemon wedges if using.

Ingredients

  • Black Pepper, to taste
  • 4 tbsp Unsalted butter
  • small handful Parsley chopped, for garnish
  • 450 g Chicken breast cut into bite-sized pieces
  • 1 Lemon cut into wedges, optional to serve
  • Salt, to taste
  • 4 cloves Garlic minced

Notes

Cook in batches if your pan is small to avoid steaming the chicken.

Add chilli flakes for a little heat or a splash of cream for a richer sauce.
