Flija (Layered Albanian Pancake Pie)

Flija is a celebratory Albanian speciality made by cooking many thin layers of batter, each enriched with cream or butter.

The result is a uniquely textured, comforting dish that pairs beautifully with yogurt, honey, or savoury accompaniments.

Ingredients

  • 500 g Plain Flour
  • 1 tsp Salt
  • 350 ml Cream or butter-yogurt mix
  • 1 L Water approx, to make thin batter

Method

  1. Whisk flour, water and salt into a thin crepe-like batter.
  2. Grease a large round tray.
  3. Spread a thin layer of batter and bake/broil until just set.
  4. Brush with cream or butter mix.
  5. Repeat for 20–30 layers.
  6. Finish under the grill until lightly browned and serve with yogurt or honey.
