This deluxe Spam, egg and rice bowl turns a store-cupboard tin into a satisfying quick meal. The Spam is fried until crisp at the edges, then layered over hot rice with wilted spinach, a fried egg and a savoury soy-sesame drizzle.

It is simple, salty-sweet comfort food with enough greens and crunch to feel like a proper bowl rather than a fridge-raid snack.

  1. Make sure the rice is hot and divide it between serving bowls, keeping it warm while you cook the topping.

  2. Heat a non-stick frying pan over a medium-high heat. Add the Spam and fry for 2–3 minutes, turning until the edges are crisp and browned.

  3. Push the Spam to one side of the pan, crack in the egg and fry until the white is set and the yolk is still soft, or cook it to your liking.

  4. Lift the Spam and egg onto the rice. Add the spinach and garlic to the same pan and toss for about 1 minute until just wilted.

  5. Spoon the spinach into the bowl, then drizzle over the soy sauce and sesame oil.

  6. Finish with sesame seeds, spring onion and chilli crisp or sriracha if using. Eat straight away while the egg yolk can run into the rice.
