Easy Chicken Fried Rice

Easy Chicken Fried Rice is a speedy, satisfying meal built for busy evenings. Day-old rice fries up perfectly with tender chicken, vegetables and a simple savoury sauce.

It is ideal for using leftovers and beats takeaway for speed and value.

  1. Heat 1 tbsp oil in a wok and cook chicken until done, then remove.
  2. Add remaining oil and scramble eggs briefly; remove.
  3. Stir-fry carrot, peas, spring onion and garlic for 2–3 minutes.
  4. Add rice and break up clumps over high heat.
  5. Return chicken and egg to the wok.
  6. Add soy sauce and sesame oil, tossing well.
  7. Cook 2 more minutes and serve hot.

Ingredients

  • 2 Egg beaten
  • 700 g Cooked Rice cold, day-old
  • 3 tbsp Soy Sauce
  • 1 tsp Sesame Oil
  • 2 tbsp Vegetable Oil
  • 1 Carrot finely diced
  • 3 Spring Onion sliced
  • 350 g Chicken breast diced
  • 120 g Frozen Peas
  • 2 cloves Garlic minced

Notes

Season to taste and adjust timings slightly depending on your hob/oven.
