Method

- Heat oven to 180°C (160°C fan). Grease and line two 20cm cake tins (or one deep tin).
- Beat butter and sugar until pale and fluffy.
- Beat in eggs one at a time, adding a spoon of flour if needed.
- Fold in flour, baking powder, vanilla and milk until just combined.
- Bake 25–35 minutes until golden and springy; cool completely.
- Beat icing ingredients until smooth, sandwich and decorate.

- 5ml Baking powder
- 200 g Unsalted butter softened
- 30ml Milk
- 10ml Vanilla extract
- 4 Egg large
- 100 g Butter for icing
- 200 g Icing Sugar for icing
- 200 g Self-raising flour
- 200 g Caster Sugar
Notes
You can substitute regular cider for French cider if needed. The cake pairs beautifully with an additional serving of fresh apples on the side.
