Delicious Apple and Cider Cake

Bake something special with this rich and flavorful Apple and Cider Cake.

Seasonal apples are combined with French cider, warm spices, and nuts in this satisfying dessert, perfectly topped off with a tangy mascarpone cream.

Method

  1. Heat oven to 180°C (160°C fan). Grease and line two 20cm cake tins (or one deep tin).
  2. Beat butter and sugar until pale and fluffy.
  3. Beat in eggs one at a time, adding a spoon of flour if needed.
  4. Fold in flour, baking powder, vanilla and milk until just combined.
  5. Bake 25–35 minutes until golden and springy; cool completely.
  6. Beat icing ingredients until smooth, sandwich and decorate.

Ingredients

  • 5ml Baking powder
  • 200 g Unsalted butter softened
  • 30ml Milk
  • 10ml Vanilla extract
  • 4 Egg large
  • 100 g Butter for icing
  • 200 g Icing Sugar for icing
  • 200 g Self-raising flour
  • 200 g Caster Sugar

Notes

You can substitute regular cider for French cider if needed. The cake pairs beautifully with an additional serving of fresh apples on the side.
