Crispy Onion Bhajis

Method

  1. In a large bowl, combine the sliced onions, gram flour, ground cumin, ground coriander, turmeric powder, chilli powder, and salt.
  2. Add enough water to make a thick batter, mixing well to coat the onions.
  3. Stir in the chopped fresh coriander.
  4. Heat oil in a deep pan. Drop spoonfuls of the batter into the hot oil and fry until golden brown and crispy.
  5. Drain on kitchen paper and serve hot with mint chutney.

  • 5ml Salt
  • Water as needed
  • 30ml Coriander chopped fresh
  • 2 Onion thinly sliced large
  • 5ml Coriander ground

Notes

Red onions are often preferred for their sweet flavor and vibrant color. However, white or yellow onions work well too. Thinly sliced onions ensure that each bhaji cooks evenly and gets sufficiently crispy.

Don't skimp on the spices. Classic seasonings include ground cumin, coriander, turmeric, and sometimes a hint of garam masala or chili powder for heat. Besan or gram flour is traditional and gives a nutty flavor and crisp texture. It’s also gluten-free.
