Crispy Cornflake-Crusted Chicken Burgers

These crispy cornflake-crusted chicken burgers give you the crunch of fried chicken without deep-frying. The seasoned crumb turns golden in the air fryer while the chicken stays juicy inside.

Build them in toasted brioche buns with bacon, lettuce, tomato and mayonnaise for a quick, satisfying dinner that feels like a proper takeaway-style burger at home.

  1. Heat the air fryer to 200°C. Put the flour on one plate, beat the egg in a shallow bowl, then mix the crushed cornflakes with the Cajun seasoning, paprika, garlic powder and salt on a second plate.

  2. Pat the chicken dry and flatten any thick parts so the fillets cook evenly. Coat each piece in flour, dip in egg, then press firmly into the seasoned cornflakes until well covered.

  3. Lightly spray the air fryer basket with oil. Add the coated chicken in a single layer and spray the tops with a little more oil.

  4. Air-fry for 16–20 minutes, turning halfway, until the coating is crisp and the chicken is cooked through with no pink in the centre.

  5. Toast the brioche buns and spread the cut sides with mayonnaise. Layer with lettuce, tomato, the crispy chicken and bacon.

  6. Close the burgers and serve straight away while the coating is crunchy, with extra salad or chips on the side if you like.
