Crispy Caramelised Parsnip Fries

These crispy caramelised parsnip fries are a sweet-savoury alternative to regular chips, with orange zest, cinnamon and a little demerara sugar helping the edges brown beautifully.

They are best served straight from the air fryer while crisp, either as a side for roast meats or as a snack with a simple yoghurt or garlic dip.

  1. Preheat the air fryer to 180°C.
  2. Peel and trim the parsnips, then cut them into even fries so they cook at the same speed.
  3. Put the parsnip fries in a large bowl with the olive oil, orange zest, orange juice, cinnamon, demerara sugar, salt and black pepper. Toss well to coat.
  4. Arrange the parsnips in a single layer in the air fryer basket, cooking in batches if needed.
  5. Air fry for 18–20 minutes, shaking after 10 minutes, until tender inside and crisp and caramelised at the edges. Serve straight away.

Ingredients

  • 500g parsnips peeled and cut into even fries
  • 1 tbsp olive oil
  • 1 Orange zested, then 1 tbsp juice squeezed
  • 1/2 tsp ground cinnamon
  • 1 tsp Demerara Sugar
  • salt, to taste
  • Black Pepper, to taste

Notes

Cut the parsnips into even sticks so they cook at the same speed.
If your air fryer basket is small, cook in two batches rather than overcrowding it.
