Cheese-Stuffed Potato Cakes
Golden pan-fried potato cakes with a crisp outside and a soft melted-cheese centre.
These crisp little cabbage fritters turn a few everyday ingredients into a savoury snack, side dish or light lunch. Shredded cabbage is bound with egg and flour, then pan-fried until golden outside and tender within.
Serve them warm with a yoghurt or mustard dip, or add a salad to make them a more substantial meal.
Put the shredded cabbage into a large bowl. Add the beaten eggs, garlic, parsley, paprika, salt and pepper.
Sprinkle over the flour and mix until the cabbage is evenly coated and the mixture is slightly sticky. Leave to stand for 5 minutes.
Heat the oil in a large frying pan over a medium heat.
Scoop portions of the mixture into the pan and flatten them into small patties, leaving space between each one.
Fry for 3–4 minutes on each side until golden and crisp. Work in batches, adding a little more oil if needed.
Drain briefly on kitchen paper and serve warm with a dipping sauce or salad.
