Bannock

Bannock is a straightforward flatbread made from basic store-cupboard ingredients and cooked quickly in a pan.

This version is deliberately simple: mix a soft dough, pat it into rounds and fry until golden. Serve warm with butter, jam, soup or stew.

Method

  1. Mix the flour, baking powder and salt in a large bowl.
  2. Stir in the milk and oil until a soft, slightly sticky dough forms. Add a little more flour only if it is too wet to handle.
  3. Turn onto a floured surface and knead gently for 30 seconds, then divide into 8 pieces and pat into rounds about 1cm thick.
  4. Heat a thin layer of oil in a heavy frying pan over a medium heat. Fry the bannock rounds for 3-4 minutes per side until golden and cooked through.
  5. Drain briefly on kitchen paper and serve warm.

  • 360g Plain Flour plus extra for dusting
  • 2 tbsp baking powder
  • 1 tsp salt
  • 250ml milk or water
  • 2 tbsp Vegetable Oil plus extra for frying
  • butter optional, to serve
