Chicken & Avocado Breakfast Muffin

This savoury breakfast muffin layers juicy chicken patties with smoked cheddar and a bright avocado smash for a balanced, satisfying start to the day. It comes together quickly, making it ideal for busy mornings when you want something filling, fresh, and high in protein.

  1. In a bowl, combine mashed avocado, finely chopped spinach, basil, tomatoes, lime juice, and lime zest. Season lightly and set aside.
  2. Heat olive oil in a frying pan over medium heat. Shape chicken sausage meat into 4 patties and cook until fully cooked through, turning as needed.
  3. Top each hot patty with smoked cheddar and let it melt for 1–2 minutes.
  4. Toast the English muffins until golden.
  5. Spread avocado mixture onto each muffin base, add the cheesy chicken patty, then close with the top muffin and serve.

Ingredients

  • 2 medium Tomatoes finely chopped
  • 2 medium avocados mashed
  • 50g Spinach finely chopped
  • 10g Basil finely chopped
  • 4 English muffins split
  • 1 pack (about 400g) chicken sausages casings removed, shaped into 4 patties
  • 1 Lime juice and zest
  • 4 slices smoked cheddar
  • 2 tbsp Olive Oil

Notes

Use ripe avocados for the creamiest texture.
Cook patties fully before topping with cheese so it melts evenly.
For extra heat, add a pinch of chilli flakes to the avocado smash.
For an extra breakfast boost, add a fried or poached egg before closing the muffin.
