This cheesy pork mince omelette is a quick, filling meal made with browned pork, chopped vegetables and mature cheddar folded through soft eggs.

Cook the filling first, then make four thin omelettes in the same pan and fold the mixture inside while the cheese melts.

  1. Heat half the oil in a large non-stick frying pan. Add the onion and mixed vegetables and cook for 4–5 minutes until softened.

  2. Add the pork mince, garlic and smoked paprika. Cook for 6–8 minutes, breaking up the mince, until browned and cooked through. Season with salt and pepper, then transfer to a bowl.

  3. Beat the eggs and warm the remaining oil in the pan. Pour in a quarter of the eggs and cook gently until nearly set.

  4. Spoon a quarter of the pork filling over the omelette, scatter with cheddar and fold it over. Cook for 1 minute until the cheese starts to melt, then slide on to a plate. Repeat with the remaining eggs and filling.
