Aubergine Cannelloni with Mushroom and Blue Cheese Stuffing
Thin slices of aubergine are rolled around a creamy mushroom and blue cheese filling, then baked with a simple tomato sauce for a rich vegetarian dinner.
These cheesy pepperoni pizza subs turn simple bread rolls into a quick, satisfying meal with rich tomato sauce, spicy pepperoni, sweet peppers and plenty of melted mozzarella.
They are ready in about 25 minutes and work well for a relaxed lunch, easy midweek dinner or informal sharing spread.
Heat the oven to 200°C fan and line a baking tray with baking paper.
Mix the passata, tomato purée, garlic, oregano, olive oil and a little salt and pepper in a bowl.
Place the split rolls cut-side up on the tray and spread them generously with the pizza sauce.
Top with the pepperoni, sliced red pepper and red onion, then cover with the mozzarella and Parmesan.
Bake for 10–12 minutes until the rolls are crisp at the edges and the cheese is melted and bubbling. For darker topping, place them under the grill for the final 1–2 minutes, watching closely.
Scatter with fresh basil, cut into manageable portions if needed and serve hot.
