Ingredients

  • 1 Onion medium
  • Coriander Fresh, for garnish
  • 3 tablespoons Olive Oil
  • 1½ teaspoons Salt
  • 1 clove Garlic

Method

  1. Combine 350g plain or gluten-free flour, 1 teaspoon active dry yeast, 1 teaspoon sugar, and 1½ teaspoons salt. Mix in 3 tablespoons olive oil and 230ml warm water. Knead until smooth, let rise for 1 hour.
  2. Blend 2 avocados, 125ml lemon juice, 1 tablespoon nutritional yeast, 1 clove garlic, ¼ teaspoon oregano, salt, and black pepper for the sauce.
  3. Sauté marinated tempeh in olive oil until browned and crispy.
  4. Stretch the dough into a 30cm circle, apply avocado sauce, and add tempeh, sliced bell peppers, onion, baby spinach, and vegan mozzarella.
  5. Bake at 230°C for 12-15 minutes until golden.
  6. Garnish with fresh coriander and serve.

Notes

For an even quicker preparation, you can opt for shop-bought pizza dough. Enhance the flavour profile with a pinch of chilli flakes in the sauce or a balsamic glaze drizzle before serving. Pair with a crisp lager or a fruity Riesling for the perfect dining experience.
